Nutella Cheesecake




For those of you that are a little more daring, here is a great no bake recipe for you!  This recipe is a little more challenging with several more steps than my other recipes, but it is definitely worth the extra effort.  This combines the amazing chocolate and hazelnut flavor of Nutella with the creamy rich flavor of cream cheese to create one fabulous dessert.  Anna Murphy, a baking enthusiast, said that, “I love baking, but being able to make a dessert without the hassle of the oven is great.  I still get the joy of creating a great dessert that I can serve to my family and friends”.   

What you will need:

12 Oreo Cookies, crushed into crumbs
3 tablespoons unsalted butter, melted
2/3 cup Nutella
1 teaspoon vanilla extract
1 (8 ounce) tub frozen whipped topping, thawed

1 (8 ounce) package cream cheese, softened

1. In a medium bowl, stir together the Oreo cookie crumbs and melted butter. Evenly divide the crumbs between your individual serving dishes and press into the bottoms of the dishes to form a crust layer.
2. In a large bowl, with an electric mixer, beat the cream cheese and Nutella until smooth. Add vanilla and mix to combine. Using a rubber spatula, fold in the whipped topping until well combined.
3. Evenly spoon the filling into individual serving dishes. Cover with plastic wrap and refrigerate for at least 2 hours before serving.
4. For even more decadence, you can garnish with more whipped topping, chocolate shavings, or chopped hazelnuts.

Cookie & Cream Bark







This is a great holiday recipe that is simple to make and great for a gift!  This is a take on the candy cane bark that we are all familiar with during the holiday season, except this is made with Oreos.  It combines creamy and crunchy textures to create one delicious dessert.  All it takes is a couple of steps and you are on your way to impressing all of your friends with a homemade dessert.  This 2 ingredient recipe is one of my favorites to make in a hurry and like busy mom Amy Brian says, “Anything that takes so few ingredients and such little time is defiantly a recipe worth trying”.

What you will need:
10 oz white chocolate chips
15 Oreos, plus 3 for topping

1. Melt chocolate in the microwave in 30 second increments, stirring each time until just melted. 
2. Roughly chop the 15 Oreos and stir with the melted chocolate to combine.
3. Pour mixture onto a parchment paper lined baking sheet and smooth out.  Top with the remaining 3 chopped Oreo's.
4. Refrigerate for 10 minutes or until chocolate is hardened.  Break bark apart into large chunks with a fork and enjoy!


Chocolate Pudding Pie




This non baked pie is one of the easiest recipes ever.  It literally takes 5 ingredients and about 30 minutes to make.  It is an ingenious recipe that I have been making for years for events such as birthdays and cookouts.  This is a recipe that is not only simple to make, but delicious to eat and you don’t even have to tell people how easy it actually was.  From the wise words of self proclaimed chef Norita Lemoine, “Just because it is easy to make doesn’t mean anyone has to know, let them think you slaved away over a dessert just for them, the proof is in the taste”. 

What you will need:
1 Pre-made graham cracker pie crust
1 Large Box instant chocolate pudding
2 Cups Milk
1 tub Whipped Topping
Chocolate sauce for decoration

1. Pour 2 cups of milk into a bowl with the box of instant chocolate pudding and whisk until combined.
2. Pour the pudding into the pie crust and refrigerate until set (about 15 minutes).
3. Remove from the fridge when the pudding is set and smooth the whipped topping over the top.
4. Drizzle the chocolate sauce over the top of the pie in a decorative design.
5. Serve and enjoy!

Chocolate Éclair Pie




   The first time I ever had Chocolate Éclair Pie was at a Fourth of July party when I was 12, and I have been hooked ever since.  It is really easy to make and is great for a party since it can serve so many people.  When you bite into this chocolaty and gooey dessert, it reminds you of a delicious chocolate éclair, but in pie form.  I like it so much that I had my mom ask for the recipe and this is the rendition of the one she gave me.  According to home cook Alice Mayer, “Sometimes it’s the simplest of recipes that taste the most decadent”.

What you will need:
1 Box of Graham Crackers
1 Can of Chocolate Frosting
1 Tub of Whipped Topping
2 Small Boxes of Instant Vanilla Pudding
3 Cups of Milk

1. Mix the instant pudding, milk and whipped topping in a bowl until well combined.
2. Line the bottom of a 9x13 inch pan with a layer of graham crackers. 
3. Next, pour half of the pudding mixture on top of the graham cracker layer and smooth out.
4. Again, layer with more graham crackers then pour the rest of the pudding mixture on top and smooth out.
5.  Add a final layer of graham crackers to the top.
6. Next, melt the chocolate frosting in the microwave for about 30 seconds so that it will be easy to pour.
7.  Pour the melted chocolate frosting on top of the graham cracker layer and smooth out.
8.  Refrigerate for 30 minutes or longer to set up, serve and enjoy!






Cake Batter Balls




This no bake dessert is one of my new found favorites!  They are cake batter balls that taste exactly like cake batter off of a spoon, but better! You don’t have to worry because this recipe requires no eggs, so it is safe to eat.  You can decorate these however you like with fun sprinkles, and even try different variations of chocolate.  These are great for kids, or even your friends, to help out.  When talking to busy Grad Student Marilyn Waddell she said that, "These are so great to make in a hurry, I don't have a lot of time to bake and these are quick, easy, and everyone loves them!".  These are a must for a party or cookout and will definitely be a crowd pleaser! 
What you will need:
1 ½ cups all purpose flour
1 cup yellow cake mix
½ cup unsalted, room temperature butter
½ cup white sugar
1 teaspoon vanilla
1/8 teaspoon salt
4 tablespoons milk
2 tablespoons sprinkles 
16oz white chocolate

1. In the bowl of an electric mixer beat together 1 1/2 cups of flour, 1 cup of yellow cake mix, 1/ 2 cup of unsalted, room temperature butter, and 1/2 cup of white sugar until the mixture comes together.
2. Add in 1 teaspoon of vanilla, 1/8 teaspoon of salt and 4 tablespoons of milk and mix until the dough comes together
3. Finally mix in 2 tablespoons of sprinkles and mix until evenly distributed.
4. Roll the dough into 1-inch balls and place on a cookie sheet covered in foil or parchment paper.
5. Next, place 16 ounces of white chocolate in a microwave safe bowl and melt in 30 second increments until smooth, stirring after each increment.
6. Dip cake batter balls into the melted chocolate and coat completely. Remove with a fork and place back on the baking sheet covered in foil or parchment paper, then immediately decorate with sprinkles.
7. Let them set up in the fridge for about 15 minutes, then enjoy!

Peanut Butter Bars




Peanut Butter cup bars


This is a great recipe to satisfy your sweet tooth without having to breakout the mixer, oven mitts and all those other gadgets.  These “peanut butter cup” bars are super simple to make, and taste even better!  I have made this several times for my friends and they all love it.  I have even tried different variations of rolling them into balls instead of the bar version.  After making these with George Mason University music major and student-athlete Lindsay Bowen, she told me that, “These taste just like Reese’s Peanut Butter cups, but better, and are so easy to make on a busy schedule like mine!”.


What you will need:
½ cup unsalted butter
1¾ cups powdered sugar
1 cup smooth peanut butter
¾ cup graham cracker crumbs
¼ cup unsalted butter
½ cup milk chocolate chips

1. Line an 8×8-inch square pan with foil, leaving enough to hang over the sides, and then butter the foil.
2. In a medium saucepan, melt the ½ cup of butter over low heat. Once melted, remove from heat and stir in the powdered sugar until smooth. Stir in the peanut butter and graham cracker crumbs until completely combined and smooth. Spread the peanut butter mixture into the prepared pan and smooth the top.
3. In the now-empty saucepan, melt the ¼ cup unsalted butter over low heat. Add the chocolate and stir until almost completely melted. Remove from heat and continue stirring until it is completely melted. Pour the melted chocolate over the peanut butter layer and smooth into an even layer.
4. Refrigerate for about 30 minutes to set. Remove from the pan using the foil overhangs and place on a cutting board. Use a pizza cutter or sharp knife to slice into squares and enjoy!
-If you want to try something a little different, you can roll the peanut butter mixture into balls, and dip these into the chocolate, coating them well, and then place them on a foil lined pan in the fridge!
